500 g of Type "0" Wheat Flour (W 170-190)
100 ml extra virgin olive oil
150 ml of Bombino Bianco wine

½ tablespoon Salt
½ teaspoon Bicarbonate
½ teaspoon Water
Preparation:
Dough: Place the flour in a well on a flat surface and pour the extra virgin olive oil, Bombino Bianco wine, fennel seeds and baking soda into the center. Add the salt dissolved in the water and knead the ingredients until the dough is smooth and homogeneous.
Shaping the Taralli: Cut the dough into pieces and form sticks about 6 inches long and about the thickness of a little finger. Shape the sticks into a drop or ring shape, exerting light pressure at the junction point. Let the taralli rest on a cloth for at least 6 hours.
Cooking and Drying: Bring lightly salted water to a boil in a pot and dip the taralli in it. Once they have risen to the surface, remove them with a skimmer and place them on a tea towel to dry at room temperature for another 6 hours. Finally, bake them at 200°C for about 30 minutes, until desired browning and crispness.
