The participating restaurants, located along lasse Milano-Crema, offer fixed-price menus designed specifically to enhance the flavor of the King of Risottos, through traditional recipes and reinterpretations for a total of no less than 23 dishes made with Carnaroli rice.
The recipes are all to be discovered: Carnaroli sfumato al Valdobbiadene with ossobuco alla Milanese in gremolada, Carnaroli Gran Riserva with walnuts, with Taleggio cheese fondue, Carnaroli with octopus and zucchini, Ris e Lat, Carnaroli Gran Riserva with sweet Gorgonzola DOP and Mantuan pears caramelized with brown sugar and Passito, and many others.
The Cazoeula Festival in Cantù
The prince dish of Lombardy could only have a dedicated festival. And that is why throughout the Upper Lombardy area, there is the Cassoeula (Cazoeula) Festival: a stew of cabbage, ribs and pork rinds. It is a very rich and nutritious dish, capable, in the past, of sustaining peasant families.
Cazoeula, being a very laborious dish that requires slow cooking, is to be eaten strictly in company, washed down with a good damn red. A barbera or bonarda perhaps, especially if it comes from the nearby vineyards of the Oltrepo Pavese.
Starting on St. Anthony's Day (Jan. 17) and for two entire months, chefs from Brianza will compete to win the coveted Cazoeula d'oro trophy, awarded to the best cazoeula of the year, judged by the popular jury and the technical jury, made up of chefs from the Associazione Cuochi della Provincia di Como (Como Province Chefs Association) and trade journalists.
